Combo sounds good, that's basically what I started with. But, I'd maybe go for a 9' to give you some more casting power, but 8' will do the trick. You'll probably also need some kind of waders if as you say, want to "get in some water"!
Some fly's will all so help so depending on where you're fishing will determine what type of patterns to choose. Ask the locals to give you some tips on what they're biting on.

A good gauge for backing for a 5 wt reel should be ~ 100-150 yds of #20.

Good luck,
Mark

I highly recommend Cabela's combo outfits. "Sweetwater" is a really good outfit for the money. You can find a wide range of prices and sizes. I'd go with 8 or 81/2 footers, with a double taper 4 or 5 weight line. 75-100yds backing. I bought felt sole boot foot waders at Cabela's for $49.00, and they lasted for years! Any fly shop worth their salt will be more than helpful from that point on.
Tight lines and warm feet!
